This is another ice cream you can make at home. A must to cool off from the summer’s heat. Those of us who want to stay off refined carbohydrates, refined sugars, milk and gluten, this is a healthy ice cream recipe for you.
Not only is this ice cream low in the stuff you don’t want in your food, it is also very nutritious. A couple of people sampled it and realized that a small portion left them satiated… they were satisfied and did not need to snack more.
Take a look at the ingredient list and you’ll understand why:
Ingredients for low carb ice-cream.
Four main ingredients: 2 whole Avocadoes, 400ml Coconut milk, 4 Eggs, a punnet of fresh Strawberries
Optional ingredients: Honey (if you want paleo but not bothered by the sugar), and/or Artificial sweetener like Stevia (if you are bothered by sugar and not particular about paleo)
Nutritional quality of these ingredients:
Eggs: very high quality protein, fats and vitamin D & E and Bs — almost no carbs
Coconut milk: high in saturated fat, minerals — very low carbs, high in flavour.
Avocado: High in monounsaturated fat, postassium and other minderals, high in soluble and insoluble fiber, Vitamins C, K and Bs –low in carbs
Strawberries: — Rich in Vit C, flavour and natural source of sugar.
The high fat content makes for good flavour in the ice-cream. The calorie count is not low (this is no low calorie dessert). That is ok, because unlike low calorie desserts, this one makes you really full with one portion. We experienced it.
Place in a stainless steel saucepan coconut milk and eggs. Whisk with a [easyazon-link asin=”B000EGA6QI” locale=”us”]hand held blender[/easyazon-link].
Place the pan on a cook top. Best to use an [easyazon-link asin=”B0045QEPYM” locale=”us”]induction cooktop[/easyazon-link] as it controls the cooking better.
Cook on low heat, keep whisking.
Keep whisking until the mixture thickens and you can see the eggs cook up a little. This should take about 20 minutes.
Take off the cook top and let it cool to room temperature, or cooler.
Prepare strawberries and avocado. Add these to the coconut-egg mix. This is a good time to add your choice of sweetener.
I have left out the sweetener, since we can serve it with honey on top.
Blend till smooth.
Place the pan in the deep freezer.
After 40 minutes, remove from the freezer and blend thoroughly. Put it back into the freezer.
Do this every 30 to 40 minutes until you are satisfied with the texture:
Yummy. We can eat this out of the pan.
This serving makes a HUGE portion. I think it will serve 12 people because it is very filling. Serve with honey or your favourite summer fruits.
In truth, if you are living a healthy low-carb existence, and you know your body is burning fat and not sugars, you do not need to worry about a bit of sweet desserts every once in a while. These recipes are specially useful for many people who are trying to wean themselves off sugar.
Good fats can do that very well. This type of ice cream is zero in empty calories. Every bite you take is loaded with nutrients. That is how you should eat — to feed the body for growth and rejuvenation.
